As mentioned in an earlier post, there are many benefits to eating seasonally. Winter vegetables tend to be heartier and all delicious after roasting in the oven. All the flavors and sweetness of the vegetables really come out and it smells delicious.
Roasting vegetables does not require much preparation. Wash, chop and put them on the tray. I prefer using vegetables of different color.
half a bag of frozen brussel sprouts l 1/5 of a white cabbage l 3 large potatoes l 4 carrots l 3 beetroots
olive oil l salt + pepper
After chopping the vegetables and placing them on the tray in sprinkled them with olive oil, dried rosemary, pepper and salt. Roast in the oven for 30 to 45 minutes (depending how small you cut them) at 200 degrees celsius.
